Ingredients
½ cup water
⅓ cup couscous
1 cup chopped fresh parsley
½ cup chopped fresh mint
¼ cup lemon juice
3 tablespoons extra-virgin olive oil
2 teaspoons minced garlic
¼ teaspoon salt, divided
¼ teaspoon freshly ground pepper
1 pound chicken tenders
1 medium tomato, chopped
1 cup chopped cucumber
4 10-inch spinach tortillas
Instructions
Cook the couscous first. Bring water to boil in small saucepan. Add in couscous then remove from heat. Cover and let stand for 5 minutes. Fluff with a fork and set aside.
Next, combine parsley, mint, lemon juice, oil, garlic, and ⅛ teaspoon salt and pepper in a small bowl.
In a medium bowl, toss chicken tenders with 1 tablespoon of the mixture you just made and ⅛ teaspoon salt. Place chicken in large nonstick skillet and cook over medium heat until cooked throughout. Let cool, then cut into bite-size pieces.
Mix the remaining of your mixture with the couscous along with the chopped tomatoes and cucumbers. Add in the chicken also.
Assemble the wraps by spreading about ¾ cup of your mix onto each wrap. Roll the wraps up like a burrito and serve.
