In a medium bowl, combine the flour, baking powder, baking soda, and salt and set aside.
In another medium bowl, whisk the eggs, butter, sugar, buttermilk, and vanilla together until well combined.
Make a well in the dry ingredients and then pour the wet ingredients into the dry ingredients and whisk gently until smooth. Be careful not to overmix.
Pour batter into silicone molds filling until just below the edge
Bake at 350 for 5-7 minutes
Remove from oven and cool for five minutes.
While the waffles are cooling melt the chocolate in the microwave in 30 second increments.
Once the chocolate is melted, dip half of the mini waffle in the chocolate, place on a sheet of parchment paper, shake sprinkles on top of chocolate and let sit 20 minutes to harden.
