Serves: 4 wraps
  • ½ cup water
  • ⅓ cup couscous
  • 1 cup chopped fresh parsley
  • ½ cup chopped fresh mint
  • ¼ cup lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons minced garlic
  • ¼ teaspoon salt, divided
  • ¼ teaspoon freshly ground pepper
  • 1 pound chicken tenders
  • 1 medium tomato, chopped
  • 1 cup chopped cucumber
  • 4 10-inch spinach tortillas
  1. Cook the couscous first. Bring water to boil in small saucepan. Add in couscous then remove from heat. Cover and let stand for 5 minutes. Fluff with a fork and set aside.
  2. Next, combine parsley, mint, lemon juice, oil, garlic, and ⅛ teaspoon salt and pepper in a small bowl.
  3. In a medium bowl, toss chicken tenders with 1 tablespoon of the mixture you just made and ⅛ teaspoon salt. Place chicken in large nonstick skillet and cook over medium heat until cooked throughout. Let cool, then cut into bite-size pieces.
  4. Mix the remaining of your mixture with the couscous along with the chopped tomatoes and cucumbers. Add in the chicken also.
  5. Assemble the wraps by spreading about ¾ cup of your mix onto each wrap. Roll the wraps up like a burrito and serve.
