Birthday Classroom Treats – Popcorn Marshmallow Balls

Last week was my son’s birthday and this week I need to send in a classroom treat for his classroom birthday celebration. They have asked this year not to send in sweets. Well, there are not to many ‘treats’ that are not sweet besides fruit. So, I am hoping this will be a compromise. Popcorn and marshmallows.

INGREDIENTS

1 Stick Butter – Divided 4 tbsp. (¼ cup) unsalted butter
10 oz. marshmallows
1 tsp. vanilla extract
¼ tsp. salt
12 cups buttered popcorn (about 1/2 cup kernels)
Sprinkles (optional)
Cupcake papers

DIRECTIONS

  • Melt 4 tbsp. (1/4cup) of butter along with the marshmallows, vanilla extract, and salt in a saucepan over medium heat. (Leave the rest of the butter stick sitting out to soften.) Make sure to stirring constantly until the marshmallows are completely melted and the mixture is smooth.
  • In a large mixing bowl pour the mixture over the top of your popcorn. Toss gently to combine and coat the popcorn. Allow to cool just slightly, then form into balls with well-buttered hands.(This is what the rest of the stick of butter is for.) Place on sheets of wax paper, sprinkle on sprinkles and allow to set. Once firm, place each in cupcake papers.
  • Do not refrigerate because they will become hard as rock. However, I do recommend eating them within a day or two.

It wasn’t till after I made these that I realized, I had no way to package them! I bought snack treat bags but, they are too large to fit. I have regular size sandwich bags! Yes!     I have always wanted to try popcorn balls. You can customize them for any of the big fall holidays by using food coloring. These will be great for family movie night.
