Baked Mini Leprechaun Waffles
St. Patrick’s Day would be the perfect morning to make these Baked Mini Leprechaun Waffles. No waffle iron or syrup needed for these sweet treats! If your kids class is having a St. Patrick’s Day treat day these would be super easy to make for them.
Pro Tip:
For this recipe, you will need to use a Silicone Waffle Mold. When you try using a regular waffle iron using the green food coloring, it turns a weird color. It is best to bake these, to get the perfect look.

Ingredients
- 1 3/4 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3 large eggs
- 1/2 cup unsalted butter, melted
- 1/3 cup granulated sugar
- 1 3/4 cups buttermilk
- 1 tsp vanilla extract
- Green food coloring
- Mini waffle silicone baking sheet
- White melting chocolate
- Green and white sprinkles
Directions
- Preheat oven to 350
- In a medium bowl, combine the flour, baking powder, baking soda, and salt and set aside.
- In another medium bowl, whisk the eggs, butter, sugar, buttermilk, and vanilla together until well combined.
- Make a well in the dry ingredients and then pour the wet ingredients into the dry ingredients and whisk gently until smooth. Be careful not to overmix.
- Pour batter into silicone molds filling until just below the edge Bake at 350 for 5-7 minutes Remove from oven and cool for five minutes.
- While the waffles are cooling melt the chocolate in the microwave in 30 second increments.
- Once the chocolate is melted, dip half of the mini waffle in the chocolate, place on a sheet of parchment paper, shake sprinkles on top of chocolate and let sit 20 minutes to harden.

What a cute idea! I don’t know if I’d dip them in the chocolate myself, but maybe some good old maple syrup, or strawberries and whipped cream.

even though I am not of Irish heritage I try and make each holiday a celebration at our home. I try to findsomething green on St Pattys day and here is a new easy recipe that also looks fun to make.
