Chicken Couscous Lemon Wrap Recipe
With my husband having prostate cancer we are trying out new healthy Mediterranean style dishes. We both liked this Chicken Couscous Lemon Wrap recipe, so I thought I would share it will all of you. Enjoy!
Ingredients:
- 1/2 cup water
- 1/3 cup couscous
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/4 cup lemon juice
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons minced garlic
- 1/4 teaspoon salt, divided
- 1/4 teaspoon freshly ground pepper
- 1 pound chicken tenders
- 1 medium tomato
, chopped
- 1 cup chopped cucumber
- 4 10-inch spinach tortillas

Mission Wraps Garden Spinach Herb Tortillas (15 oz., 6 ct.)
Directions:
Cook the couscous first. Bring water to boil in small saucepan. Add in couscous then remove from heat. Cover and let stand for 5 minutes. Fluff with a fork and set aside.
Next, combine parsley, mint, lemon juice, oil, garlic, and 1/8 teaspoon salt and pepper in a small bowl.
In a medium bowl, toss chicken tenders with 1 tablespoon of the mixture you just made and 1/8 teaspoon salt. Place chicken in large nonstick skillet and cook over medium heat until cooked throughout. Let cool, then cut into bite-size pieces.
Mix the remaining of your mixture with the couscous along with the chopped tomatoes and cucumbers.
Add in the chicken.
Assemble the wraps by spreading about 3/4 cup of your mix onto each wrap. Roll the wraps up like a burrito and serve.

I recently tried couscous for the first time, and loved it. I wanted to try it again this is a good way to do it.
WOW– incredible recipe! This is one that I would love to print out and keep. The only thing I would change is to use something like tofu or beans instead of the chicken, as I am a vegetarian. But other than that, I really can’t wait to make this!
