St. Patrick’s Day Pot of Gold Brownie Bites

Preheat oven to 350°
1. Mix brownie batter according to directions and fill mini muffin pan about halfway.
2. Bake 12-15 minutes until a toothpick comes clean, but do not over bake.
3. Once they have cooled, remove from the pan and press the center down with your thumb to create a little well for the sprinkles.
4. Fill with sprinkles, then pipe yellow frosting on top.

This is an ideal dessert for me as I am a sprinkles junkie! I love the contrast of the colors with the brown chocolate and the golden yellow, but I may vary the recipe by using another bright shade. It would be fun to personalize the frosting and sprinkles with loved ones’ favorite colors.

I thought of a fun idea on how to change this recipe up for this week’s Fourth of July. I’m going to substitute white cake mix for the brownie batter. Then, I ‘m going to use red and blue icing, and frost the tops half-and-half. I’m also going to use red and blue sprinkles! Star-Spangled Cupcakes!
