What is Easter without cupcakes?!! Making cupcakes that look like Easter Baskets, makes for a special treat on Easter Sunday. These Easter Basket Cupcakes will be a fun hit this Easter! They are much easier to make than you are thinking!

Easter Basket Cupcakes Ingredients:

  • box cake mix

Really with this you can use a chocolate cake or white cake mix. If you use a white cake mix you can use a little food coloring to give it an Easter color if you like. I made mine green. Also, look around and find a cute Easter cupcake paper to give them an extra touch.

While your cupcakes are cooking you can color your semi-sweet coconut. To do this just put a few drops of food coloring in a zip-lock bag with the coconut and shake. Tip: When making pink only use 1 drop of red food coloring.

You can find Edible Easter Basket Grass to use as the handles. Just cut to the length you want.

Take your icing and put a little food color in to match your coconut colors. Now you have everything ready to put them together.

First put the icing on….it does not take a lot. Just enough to make the coconut stick.  Then add the coconut of the matching color. Next, stick in a chocolate mini-bunny and place a few jelly beans or Cadbury Easter Candy Coated Mini Eggs. Lastly, place the edible grass on top. Those make take a little bit of time to place but, the trick is to stick them down in the icing.

Then you are Done! An impressive treat your kids and family will love!

Such a cute idea! I love the use of coconut for grass instead of icing, I tried using a tip to make icing grass… not fun! Also, the cupcake liners are PERFECT! I need to find me some of those liners 😉 Thanks for joining in the fun at our #PinUP Pin Party!!

I like these very much. The overall design and shape for the basket is very unique. My favorite part is the cut out area you made on the cupcake paper. I might vary the recipe by substituting a licorice-type candy, like Twizzlers, for the handles. That kind of a color would really make the overall look ‘pop’!
