This Vegetarian Santa Fe Soup recipe is one of our favorite family meals.

Best Santa Fe Soup
Ingredients

  • 2 tablespoons Oil
  • 1 large chopped onion
  • 1 can 15 oz Pinto Beans
  • 1 can 15 oz Black Beans
  • 1 can 15 oz Red Kidney Beans
  • 1 can 15 oz Yellow Corn
  • 1 can 15 oz White Corn
  • 1 can 15 oz Diced Tomatoes
  • 1 package Ranch Dressing
  • 1 package Taco Seasoning Mix
  • 1 cup water

Santa Fe Soup Ingredients
Directions

  • Saute chopped onion in oil.
  • Add remaining ingredients.
  • Simmer for at least 2 hours.

Santa Fe Soup
Serve! I like to serve mine with corn chips. You can choose to add hamburger meat to this recipe if you would like. If you do I would suggest doubling the ranch and taco packages.

Garnish with shredded cheese and sour cream if you like.

      I rinse and drain the black beans but, the others are not drained.
