Vegetarian Santa Fe Soup Recipe
This Vegetarian Santa Fe Soup recipe is one of our favorite family meals.

Ingredients
- 2 tablespoons Oil
- 1 large chopped onion
- 1 can 15 oz Pinto Beans
- 1 can 15 oz Black Beans
- 1 can 15 oz Red Kidney Beans
- 1 can 15 oz Yellow Corn
- 1 can 15 oz White Corn
- 1 can 15 oz Diced Tomatoes
- 1 package Ranch Dressing
- 1 package Taco Seasoning Mix
- 1 cup water

Directions
- Saute chopped onion in oil.
- Add remaining ingredients.
- Simmer for at least 2 hours.
Serve! I like to serve mine with corn chips. You can choose to add hamburger meat to this recipe if you would like. If you do I would suggest doubling the ranch and taco packages.
Garnish with shredded cheese and sour cream if you like.

I love this recipe, but I can do without the sour cream. I don’t like taco meat so this is perfect.

I rinse and drain the black beans but, the others are not drained.
